Chef Tony Castellon brings creativity, heart, and a coastal sensibility to every dish he makes. Originally from California, Tony has cooked his way across the country, from the shores of California to the mountains of Colorado, the farms of Maryland, and even a few unforgettable years in El Salvador. At just 28, he credits the strong women in his family, “the best cooks I know,” he says, for inspiring his path in the kitchen. His favorite thing to cook? “Anything seafood.” At Black Ankle, Tony loves pairing his food with our Passeggiata, for the story of community it carries, and Albariño, for the recipes it inspires in him.
The Terrace Kitchen is Black Ankle’s way of bringing the same care and creativity found in our wines to the food that accompanies them. Perched just off the Tasting Room terrace, the kitchen serves a rotating, seasonal menu crafted to pair seamlessly with what’s in your glass. Dishes that are thoughtful, local, and full of flavor, without ever feeling fussy.
Our culinary team, led by Chef Tony, draws inspiration from the rhythms of the vineyard and the bounty of Maryland farms. You’ll find a mix of comforting favorites and inventive new flavors, from handmade pastas and beef from Wayne to fresh, garden-driven salads and lamb from our own flock, all designed to complement Black Ankle wines in ways that feel effortless and natural.

The Vineyard Table is our monthly dinner series, held on the second Thursday of each month, where food, wine, and community come together in a meaningful way. Each evening features a thoughtfully curated, seasonal menu designed to pair with our wines and reflect what’s happening in the vineyard at that moment. Set against the backdrop of the farm, it’s an intimate, exceedingly fun and delicious event.
